Prep 15 mins
Ingredients –
- Self-Raising Flour – 4 Cups
- Sugar – Optional spoonful
- Salt – Large pinch
- Butter – 60 Grams (2 Ounces) Must be cold butter
- Milk – 3/4 cup
Instructions –
- Pre heat oven to 200 deg C (400 deg F)
- Sift flour
- In a large bowl rub together butter and flour with fingertips until crumbly texture.
- Make a well in the centre of the flour mix and add milk to combine using a knife to fold in.
- When combined to a soft dough consistency tip out onto a floured board or smooth surface.
- Knead with fingers, be careful not to over knead, a light touch is best.
- Pat out mix until around 2 cm high
- Use a tall glass, rub butter on the inside and outside of the glass (just a few cm)
- A tall glass allows plenty of air between the inside of the glass and the scone dough.
- Place the scones onto an oven tray, the scones should be very close to each other (1 cm)
- Brush with milk
- Place in Oven, they should rise quickly, after 10 minutes turn down the heat to 180 deg C for a few minutes until the tops turn golden brown
(Why not add vegemite, yes it works with the jam and cream!)
Enjoy with butter, your favourite jam and thickened cream, Chantilly cream or sour cream.
